Nutrition team at UOG to hold Let’s Cook workshop series

Enhancing the nutritional value of favorite meals using local produce is the focus of the new “Nihi ta Fannama’tenas (Let’s Cook)!” workshop series from University of Guam Cooperative Extension & Outreach.

Starting Sept. 30 and continuing regularly, the extension nutrition team, led by registered dietitian nutritionist Dr. Tanisha Aflague, will hold workshops covering topics including how to increase dietary intake of fiber, calcium, Vitamin D, and nutrient-dense foods as well as how to decrease intake of sodium, added sugar, and alcohol.

Workshop participants will get hands-on experience cooking and sampling new recipes and modifying old ones to improve their nutritional value.

The first workshop will be “A Focus on Fiber,” featuring recipes for turkey chili with taro, kangkong titiyas, and CHamoru-style cake using coconut flour. The workshop will be held from 9 a.m. to noon on Saturday, Sept. 30, in the Agriculture & Life Sciences Bldg., Room 125B, on the UOG campus.
