Guam Diner Bytes: Kitchen Lingo
The "buzz" about Kitchen Lingo has been going around the island for the past few weeks since they started soft opening menu tastings. Now officially open, they have received enthusiastic praise and high marks from lunch and dinner customers.
Kitchen Lingo's name sake is Chef Lingo Quichocho, who has collaborated with partners Lenny & Pika Fejeran (Pika's Cafe) to create a totally new concept in dining - "Craft Eats & Drinks". Lingo has been simmering his years of culinary experience down into this unpretentious bistro's heart and soul which is the food creations - simple, fresh, and natural. His earned his chops as Lead Cook at L'Auberge Del Mar, and Sous Chef at Bali Hai Restaurant. He was a cook at Roy's Hawaiian Fusion Cafe. He most recently was the Executive Chef/Consultant at the Avenue Steak House in Tumon.
I am so looking forward to sitting down in this intimate 20-seat restaurant with its rustic ambiance. The dinner menu selection is intentionally limited to eclectic fusion creations using seafood, pork and beef. The Pork Shoulder ($22) has soft Polenta, Sauteed Greens, Sweet N Sour Glaze, KL Pickles. The Salmon ($25) has Potato, Kangkung, Mushroom Nori Quinoa, and Miso Corn. Get the idea? If you are hungry, get the Short Rib ($26 - Lentils, Roasted Mushrooms, Creamed Kale, Beef Reduction). They have craft beers and some innovative beverages like Lemongrass Water, Watermelon Soda, local Spike Coffee French Press, and some "craft" wines. Everything seems pretty crafty here! Lots of fresh local farm produce used here! Got that personal Lingo touch! Make reservations so you don't have to stand out in the cold...also consider car-pooling...parking spaces are more limited than the menu!! Check it out!
