Boil 4 cups of water in a 4 quart pan. Chop taro leaves and add to boiling water. Add seasoning, salt, black pepper, onions and ginger. Continue cooking for about 5 minutes.

Broil (or grill) the eggplant until cooked. Hold eggplant under running water while peeling the skin.
Combine all ingredients and stir. Serve this sauce with any CHamoru meal. It can be spooned over food, or used as a dipping sauce.

Preheat oven to 160ºC. Grease a 15cm round springform cake tin and line with baking paper. Place cake tin on a sheet of aluminum foil and wrap the edges of the foil up the side of the dish and press to secure.
