Comfort food never tasted so good!
Ingredients:
3 cups flour, all-purpose
1 ½ tsp salt
5 eggs
3 egg yolks
3 tbsp olive oil
Ravioli filling
15 oz ricotta cheese
4 oz parm cheese (grated)
8 oz mozzarella cheese (shredded)
Directions:
Put flour and salt in a bowl and make a well in the center.
Beat the eggs, yolk, and olive oil and add that into the flour well, mix to incorporate then knead dough on a floured surface
It will be a stiff dough. Add flour if needed.
Rest 30 min. covered with plastic.
Roll ¼ of the dough at a time on a floured surface or with a pasta roller machine till a 5-inch thickness.
Lay half of each rolled dough on a ravioli press, put a tablespoon of filling in each hole, moisten edges with water, lay dough on top and press them with a rolling pin.
Boil in salted water for 5-7 minutes.
Serve with your favorite ragu. My favorite jarred sauce is Mezzetta marinara.
Herbs optional for garnish and taste such as basil or oregano.
